Mario Hiraldo Regalado will be our expert of the day. He’s the Master Carver and Ham Controller at Brindisa Ltd., and has over 17 years of experience in all things Ibérico. Mario is an ambassador of technique and quality, and we’re elated to have him as part of our monograph series.
